One for my Windows OS and applications, and a second for ISO's, drivers and Hyper-V. The test environment is on my Windows desktop that i utilize for network and systems management. On a daily basis I utilize Hyper-V both in production and within a test environment. You can do this how ever you want, but just be prepared for when things don't meet the expectations written on the box You wouldn't want an intense game of candy crush to kill the performance of your VMs would you? Usually type 1 hypervisors (hypervisor installed directly on bare metal) is used for top performance. For a production environment this is typically not done. This is going to be a bigger impact on RAM than you expected.
If you install windows 10 and then activate hyper-v on top you are creating a type 2 hypervisor, In that the hypervisor is a guest to the OS and resources are shared with the host OS. Its not that big of an issue today with the multicore processors but its still something you need to be aware of.Ģ.

The hardware assisted software raid uses the main CPU for disk management, whereas a true raid controller has its own dedicated processor. Just understand the limitations of the design. While they are usable there is a performance penalty over a true raid controller. There is a possibility for that on board raid controller to be a hardware assisted software raid.

I bought it with an HDD while trying to decide if I wanted SSD or an NVMe drive. Here is the result on my brand new desktop from a couple of years ago. I use Samsung EVO 850 SSDs for replacements and they can hit 500MB/sec reads on SATA 3 motherboards. Even old 5400RPM laptop drives can test faster than that. Something doing 70MB/sec is in SERIOUS need of replacement. I use ATTO for benchmarks, and every good fairly new 7200RPM SATA drive I test gets about 110-120MB/sec. Are you going to load hyper-v directly on bare metal (type-1 hypervisor) or are you going to enable hyper-v features on top of a desktop or server OS? What is your plan here? The last bit I didn't see was your hypervisor. Just be aware of this when pricing fall again. I understand RAM is stupid expensive at the moment. As Robert said RAM will be your biggest issue in this build. You can use a software like Crystal Disk Mark to get a "feels like" number when comparing different disk media. Realize these are all squishy numbers I think I remember.
I can tell you from just general disk stats you will get about 70MB/s transfer rates for a single spindle HDD, ~450MB/s for s single SSD, and ~700MB/s for an NVMe disk. Is this an on-board (probably not) intel raid controller, is this an external LSI like raid controller, or are you using a software raid like windows raid? I do realize your question was specifically about raid vs ssd, but something else you didn't mention was the raid controller used.
